DINING IN AN enclosed monastery
I love relishing the warmth of home, and traditional food gives me that heavenly feeling. So, when I am a bit tired of “avant-garde cuisine” (fizzy foams, molecular recipes, creative caviars and dissected vegetables), I just head for the religious community of the Comendadoras de Santiago.
I am passionate about tasting hundred-year-old recipes inside these convent walls, superbly prepared and served by the nuns themselves. They offer a simple but extra-delicious menu every single day, that will exceed the expectations of even the most demanding gourmets.
And, do you know why? Because these nuns’ food is not about plating and spherification techniques, but about nutrition, slow cooking and love.
